First of all, I’ve got to say that I’m so happy to have you all here! This is my first real post for my first real site with my first real name. Well, not that. But the first part is true. Unfortunately, this is new for me as well and I’m not entirely sure how to do all of that yet….
This is one of my all time favorite recipes. It’s adapted from Nestle’s recipe.
I actually was trying to make a deep dish chocolate chip cookie with garbanzo beans… it was a total fail. I was trying to use oats instead of flour and using a food processer to grind the oats up with the beans. It ended up like a weird,oaty cookie. It was really kind of horrible, though.
So, to make it up to the girl….and to me. I had to throw one of these babies into the oven.
It always surprises me how quickly this recipe comes together. I mean, you throw eggs, melted butter, sugar, flour and chocolate chips into a bowl, mix and pour into an unbaked pie crust. You could totally make it crustless, but the crust adds soooo much flavor! It’s the heavenly part of this recipe.
If you don’t have a good go to crust recipe, mine is listed below.
I was in a hurry for sweets, I pressed the pie crust in. The crust isn’t gorgeous. The taste is, oh well.
Oh, yes please.
Then, it’s highly important that you serve it somewhat warm……topped with vanilla bean ice cream, although acceptable alterations would include whipped cream.
Now, if you’re really into exciting your taste buds, you’ll top it with chocolate syrup.
Or is that just me?
And then, walk by the pie again later, cut off a sliver, eat it over the sink and pretend that you didn’t eat the equivilent of a second piece of pie before bedtime.
Repeat the second night.
Heavenly Chocolate Chip Cookie Pie2 eggs 1/2 cup flour 1/2 cup sugar (I used Ideal no calorie sweetener) 1/2 cup packed brown sugar 1 cup melted margerine 1 cup chocolate chips (I used Hershey’s sugar free
Whisk eggs until frothy, add flour, sugars/sweeteners, melted margerine. Stir until combined. Stir chips in and pour into uncooked pie crust.
*If your margerine is still hot, don’t mix in until the flour and sugars are stirred in so that your eggs don’t cook.
Pour into pie crust and bake at 350 for an hour.
Top with vanilla bean ice cream and chocolate syrup. Inhale.
Single Pie Crust:1 1/3 cup flour 2 Tbl milk 6 Tbl oil, 1/2 tsp salt
Stir all ingredients together, just until moistened. Roll out between two sheets of waxed paper or press into the bottom of your pie pan.
