Thanksgiving 2012

Thanksgiving. We had a TON of food.

The highlight? These Honey Potato Rolls. Soooooo good. I’ve made these every year, without fail. Now, these rolls are so heavy in potato and honey that they have a hard time raising. But that’s okay. They’re totally worth it.

You boil potatoes and use the warm potato water to proof your yeast. Then, you add yeast and sugar to get the yeast to bloom.

You add a TON of honey and some of the mashed potatoes to the dough. Then, you let it raise again.

It takes FOREVER to rasie the second time, but since they’re totally worth it, it’s okay.

We had these, plus roasted brussels sprouts with pecans and cranberries. We also had my favorite Sweet Potato Casserole, Stovetop stuffing is easy, and we all like it. Don’t judge. We rotisseried our turkey, so I used turkey gravy packets. I know. It’s not gourmet. Sue me.

We like whole berry cranberries instead of the jelly. Because I made this amazing Cranberry Pudding, which I’ll showcase later, it was unnecessary to worry about any special cranberry sauce. Besides, I really like the normal Ocean Spray whole berry sauce. It’s really good. Why mess with it?

We keep all the food on the island, so that we have more room on the table. We had plenty of room this year. OMG, it was sooo much food.

I actually ate two of these plates. Two.

I kept thinking I’d only go back and get my favorites on the second plate, but then they were ALL my favorites and I got pretty much the same plate.

And it was good.

The green bean casserole? I made the normal recipe, but I added a half a package of cream cheese, which made it really thick and rich. It was really the best green bean casserole I’d ever had.

But if you want to try some good rolls, you should really try these Honey Potato Rolls. They really are rich, heavy, dense, sweet, soft. Everything you can want in a roll. Oh, baby.

Honey Potato Rolls

2 Tbl active dry yeast
1 cup warm potato water
1 Tbl sugar
3/4 cup butter or margerine
1 1/2  up honey
2 eggs
2 tsp salt
1 cup warm mashed potatoes
7 cups flour (I used whole white wheat)
 
Proof yeast in 1/2 cup warm potato water, with 1 Tbl sugar. Melt butter, cool, add remaining 1/2 cup warm potato water, butter, honey, eggs, salt and mashed potatoes to the yeast and beat together. Add 1 1/2 cup flour, beat 2 minutes. Gradually add 3 1/2 – 4 1/2 cups flour till stiff. Turn out and knead remaining flour in until smooth and elastic. Exercise restraint and expect to be clingy. Or, just use your dough hook and let it beat for another few minutes. Place in greased bowl and rise 1 1/2 to 2 hours til double. Punch down dough and knead. Cut into 36 pieces, cover, rest 10-15 minutes, shape into balls, spray with oil, cover with a clean towel, let raise til nearly double. It will take 1 1/2 to 2 hours.
Bake 10-15 minutes at 400. Brush with melted butter.
These rolls don’t get super fluffy, they’re pretty dense, but sooo good.

Food Photo Friday

I invite you to my dining room table! Might I point out our pretty new placemats! I bought them from Bed Bath & Beyond and LOVE them.

They flip over and have a pretty, flowery other side. This side is my favorite, though.

I thought it might be fun to highlight some of my favorite meal photos over the last week. Food is pretty!

She is also often a slave to fashion, wanting to dress up with all sorts of condiments and garnishes.

I made these lean burger patties for myself, by myself, in the cast iron skillet, no seasonings, no marinades. Topped with sharp cheddar cheese, sliced tomato and ketchup. No bun. High protein, low carb. Good food at it’s finest.

To this day, one of the foods that I love the most. And I honestly don’t miss the bun on this one. You can quote me on it.

Leftover night. Spaghetti squash casserole. A slice of roast beef cooked on the grill with smoke, that the fireman cooked with gravy made from the drippings from the tinfoil used to seal it.  A couple of beer brats that we skillet fried up that night to add to the bounty. Top left? Collard greens. Oh and yes.

Middle boy that didn’t try the spaghetti squash casserole earlier scooped up some, I think not knowing what it was. He went back for seconds. Hehe

A Big Cedar Anniversary

This is about two weeks ago, but I wanted to save it for today, because it’s my anniversary! The fireman and I have been happily married for 3 whole years. I know, it seems like it’s been longer than that. But I can definitely say that I’m happy about all of it. What a good life I have!

My last day at the airport was really nice, they ordered in lunch and got a big cake for me and another girl that is leaving around the same time as me.

I don’t normally eat cake, but I made an exception. :)

Then, I went home  and packed, because the fireman and I left the next morning on our anniversary getaway. I figured, since I had a little time before my new job started, I’d take the opportunity to get away with him for our anniversary. Our anniversary isn’t until August 1st, but who knows what’s going on then. Kids, you know.

We drove through St. Louis. Every time I see the arches, it thrills me. I don’t live that far away, but still. They’re just so spellbinding.

Picking Peaches

From the tree to the table.

When I visited my mom and dad this last week, my sister and her kiddo’s were visiting from the south. It’s so nice to have the time off and visit with them, all together like that. I was able to stay a good few days and just hang out.

Luckily, my mom’s peaches were in season. They don’t produce heavily every year, but this year, they were wonderful!

A Boy’s Birthday

The youngest boy had a birthday a while back. We ended up celebrating in stages, like we did for the girl.

When my parents visited last, we wanted to do a small celebration for them, since they wouldn’t be back again until after his birthday. He didn’t want cake, we had just had cake for the girl’s birthday. He didn’t want pie. He didn’t really want any dessert. He wanted fruit. Yeah!

So, I bought him bananas, a cantaloupe *muskmelon depending on where you live*, bing cherries and strawberries. Cantaloupe’s are his all-time favorite fruit in the world. I figured since he doesn’t have a cake, i’d get him a loaf angel food cake and he could eat his fruit on it. He thought that was fabulous!

I know I’ve been a little MIA lately. I’ve got some new irons in the fire that I’ll be able to talk about hopefully by the end of the week. Some fun changes for me.

This last weekend was fun and busy. I went out for drinks with a friend and her other friends for her birthday last Friday, then stayed up seriously late listening to a book on cd while surfing the web. My fireman was working and the kids were gone. I really know how to party, don’t I?

We also went out for the youngest boy’s birthday, but I will post about that later.

Our bedroom looks different as well. The fireman and I rearranged our entire bedroom. We moved the bedroom to a different wall and shifted everything. It looks really amazing. The whole feel of the room is different now. We need to find a narrow side table for my side of the bed. I have it about a foot from the wall, to walk between, but need a small table to set my alarm, phone and a bottle of lotion. I’m thinking maybe a phone table or even a narrow, short cube-like bookcase of some sort. We’ll see.

Happy Father’s Day, my favorite Fireman!

For Father’s Day, the fireman asked that I make my homemade pizzas. But instead of making 3 large pizza crusts, he wanted to have smaller, different topping pizzas. So, I made the 3 large crusts recipe, but rolled them into 5 smaller crusts.

I tried to chronicle this vacation in food for you all, because man did I eat some good food. But I wasn’t able to get photos of all of the food I ate. I will share what I can, though.

I will warn you. I did not eat like normal. I ate like a woman on a vacation, with zest and vigor! LOL

The very first thing I ate was 2 packets of Biscoff cookies. I know Biscoff spread is all the rage right now, but the original cookie form will always be my favorite. And the only place I’ve ever had them was on airplane flights. So, go Delta! Anyway, the girl and I both got extra cookies cause we oohed and aahed over them. *fist pump*

Then we had to walk/ride shuttles 50 minutes to the car rental center in Atlanta airport.

We used these speed walkers whenever possible. (more…)
